研究目的在了解高中職學生蔬果攝取行為現況,並探討個人背景因素、社會心理因素、環境因素與蔬果攝取行為之間的關係。以台南縣新營地區高中職學生為研究對象,於民國99年4月進行正式問卷調查,共得有效樣本542人。所得資料以t檢定、單因子變異數分析、皮爾森積差相關,以及多元迴歸分析等統計方法進行分析,重要結果歸納如下:
一、近五成的研究對象有每天攝取三份蔬菜,近三成的研究對象有每天攝取二
份的水果。
二、研究對象女生蔬果攝取行為顯著優於男性。
三、研究對象的自覺健康狀況愈好,其蔬果攝取行為愈佳。
四、研究對象之蔬果的喜好、蔬果攝取社會支持、蔬果攝取自我效能、蔬果攝
取角色楷模、家中蔬果可獲性及學校蔬果可獲性皆與蔬果攝取行為間呈現
正相關;蔬果攝取知覺障礙與蔬果攝取行為間呈現負相關。
五、性別、年級、自覺健康狀況、家庭社經地位、蔬果的喜好、蔬果攝取社會
支持、蔬果攝取自我效能、蔬果攝取角色楷模、家中蔬果可獲性及學校蔬
果可獲性等變項,共可解釋研究對象之蔬果攝取行為50.6%的變異量
(Adj R=0.506,F=47.266,p<.001)。其中以蔬果攝取自我效能對蔬
果攝取行為的影響力最大。
最後,依據研究結果,對未來研究與實務工作提出建議。
The purpose of this study was to investigate the current vegetable and fruit intake behavior of high school and vocational high school l students, and to inquire personal background factors, social psychology factors and environment factors in relationship with vegetable and fruit intake behavior. The subjects are students of vocational and high school in Sinying of Tainan County, in Apr 2010. The instrument of the study was a questionnaire, and the valid samples are 542. T-test, One Way ANOVA, Pearson’s Product-moment Correlation and Multiple Regression were used to analyze the data and the results were as follows:
1. About 50% of the subjects consumed 3 portions of
vegetable a day. About 30% of the
subjects consumed 2 portions of fruit a day.
2. Vegetable and fruit intake behavior of female students
was significantly better than the male students.
3. The subjects who perceive their health status to be
better were more likely to eat vegetable and fruit .
4. Vegetable and fruit intake behavior was positively
correlated with Preferences, Social support, Self-
eficacy, Role modeling, Availability from home and
school and then negatively correlated with Perceived
barriers.
5. Variables, including sex, grade, perceived health
status, socio-economic position of the family,
preference of fruit and vegetable , social support,
self-efficacy, role modeling, availability from home and
school, can totally explained 50.6% of the variation of
subjects’vegetable and fruit intake behavior. (Adj
R=0.506,F=47.266,p<.001).Among those variables, the
self-efficacy was the most influential factor.
Finally, these results are discussed and applied in the practical experience and future studies.
